Preheat oven to 350 degrees.
Put olive oil in small bowl. Slice eggplant in thin rounds and dip in olive oil and place on cookie sheet lined with parchment paper. Once all of the eggplant is on the cookie sheet sprinkle the ground black pepper, sea salt and ground basil to taste on both sides of eggplant.
Place in oven for 10 minutes or until eggplant is soft then remove. Increase heat of oven to 450 degrees.
Spoon one cup of the crushed tomatoes over the frozen pizza and then place the baked eggplant on top and sprinkle the mushrooms.
Carefully spread the remaining one cup of tomatoes over the eggplant and mushrooms and sprinkle the shredded mozarella cheese and grated parmesean cheese evenly over the top.
Finally sprinkle the pizza seasoning over the entire pizza and bake as directed on the box. Enjoy!
