“Pinch Hitter” Pesto Pizza

"Pinch Hitter" Pesto Pizza Recipe
Cook Time: 15-20 min
Cook Temp: 450°


  1. Pre-heat oven to 450˚F and set oven rack to the middle position.

  2. Remove pizza from all packaging.

  3. Sauté onions in olive oil until caramelized. Drain on paper towel to remove excess oil.

  4. Spread pesto on pizza, add tomatoes, caramelized onions, feta and pine nuts.

  5. Place pizza in the oven directly on the oven rack and bake for approximately 15-20 minutes, or until the crust is golden brown


  • 12″ HRI Classic Cheese Pizza

  • 1 large sweet onion (such as vidalia) sliced and rings separated

  • 2 tbsp olive oil

  • 1/2 cup fresh tomato, diced

  • 3/4 cup prepared pesto

  • 1/2 cup feta cheese, crumbled

  • 1/3 cup pine nuts
