Twice Baked Pizza Potatoes
Prep Time: 20 min | Cook Time: 50 min | Cook Temp: 350°
Ingredients
- 4 large baked potatoes
- 4 tbsp butter
- ½ cup sour cream
- ¼ cup milk
- 1 tbsp Everything but the Pizza (seasoning blend)
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- ½ cup green onion, thinly sliced
Directions
- Preheat oven to 350°F.
- Place potatoes on baking sheet and bake for about 40 minutes or until tender. Set aside for 5-10 minutes until cool enough to handle.
- Slice potatoes in half lengthwise and scoop the inside out of each potato into a large bowl. Try to keep as much of the skin intact as possible.
- Add butter, sour cream, milk, and Everything but the Pizza seasoning to potatoes and mix together.
- Spoon the mixture back into each potato skin. Top with cheese and bacon crumbles before returning to oven for an additional 10 minutes.
- Remove from oven and top with green onions and an extra dash of Everything but the Pizza seasoning before serving.
