Sunny Side Up Breakfast Pizza
Prep Time: 30 min | Cook Time: 17-20 min | Cook Temp: 450°
Ingredients
- 12″ HRI Classic Cheese Pizza
- 1 Yukon gold potato
- 3 pasture-raised eggs
- 1/4 lb smoked bacon
- 1 oz dry basil
Directions
- Slice potatoes thin. We recommend using a mandolin slicer for even slices
- Fry sliced potatoes on a pan
- Bake bacon strips in an oven at 350°F for approximately 20-30 minutes (don’t bake all the way)
- Pre-heat oven to 450˚F
- Remove pizza from all packaging
- Place pizza in the oven directly on the oven rack and bake for approximately 10 minutes
- Chop bacon into bite-sized pieces
- Remove pizza from the oven and layer with the potato slices, then add the bacon
- Crack eggs on top of potato slices and bacon
- Place the pizza back in the oven for 7 minutes
- When the pizza is fully baked, top with dry basil
- Cut into squares and enjoy 🍳
