Sunny Side Up Breakfast Pizza

Prep Time: 30 min | Cook Time: 17-20 min | Cook Temp: 450°

Pizza topped with potatoes, bacon and 3 sunny side up eggs

Ingredients

  • 12″ HRI Classic Cheese Pizza
  • 1 Yukon gold potato
  • 3 pasture-raised eggs
  • 1/4 lb smoked bacon
  • 1 oz dry basil

Directions

  1. Slice potatoes thin. We recommend using a mandolin slicer for even slices
  2. Fry sliced potatoes on a pan
  3. Bake bacon strips in an oven at 350°F for approximately 20-30 minutes (don’t bake all the way)
  4. Pre-heat oven to 450˚F
  5. Remove pizza from all packaging
  6. Place pizza in the oven directly on the oven rack and bake for approximately 10 minutes
  7. Chop bacon into bite-sized pieces
  8. Remove pizza from the oven and layer with the potato slices, then add the bacon
  9. Crack eggs on top of potato slices and bacon
  10. Place the pizza back in the oven for 7 minutes
  11. When the pizza is fully baked, top with dry basil
  12. Cut into squares and enjoy 🍳
